When Roman meets new unexplored flavours
We never lack creativity at Ristorante Amedeo. Our kitchen staff loves to experiment, from reinterpretations of typical Roman dishes, to combinations of the most unexpected aromas and flavours. Among the many delicacies offered at Amedeo there is one particular pasta dish that has won over the palates of our affectionate customers, who continue to choose it for its wonderful delicacy. Our mezzi rigatoni pasta with octopus ragù, pecorino cheese & toasted basil bread crumble, a unique and exquisite recipe to say the least.
Octopus is one of the key raw materials in Roman seafood cuisine. From sauces to main courses, this ingredient is used in a variety of recipes. In our case, we chose to use it in a ragù: we let it simmer for several hours along with the tomato, for a sauce that is truly capable of taking you just a few steps from the sea. Our kitchen staff then decided to pair it with good Roman Pecorino cheese and a crispy basil-flavoured crumb to give the dish wonderful flavour and crunch.
The choice of pasta is also not accidental. Mezzi rigatoni pasta is indispensable when making typical Roman first courses, as well as being considered the most representative pasta shape in Rome. Alongside Spaghetti, it is used in almost all specialities of Roman cuisine, thanks to its shape that expertly collects the sauce and its thickness, which adds body to the dish.
