What’s more, consuming food made using high-quality seasonal products helps us to help the environment by shopping sustainably and enjoying foods that display their authentic and true flavours only when they are fresh. The golden rule for recognising seasonal fruit and vegetables is to look at their colours: the orange and yellow of citrus fruits in winter, the pink of strawberries and the white of pears and fennel in spring, the red of tomatoes, berries and peppers and the green of courgettes in summer, and the warm shades of autumn, like the brown of chestnuts and mushrooms or the deep orange of persimmons and squashes.

Winter or summer, we offer the opportunity to enjoy our seasonal specialities and our daily specials, made with the fresh ingredients available at the particular time of year. On our website you’ll find a section devoted to a specific seasonal ingredient: right now it’s the aubergine, the queen of summer, which we use in various dishes on our summer menu. You can enjoy it either as an antipasto (aubergine dumplings with fresh tomato, smoked scamorza and basil) or as a first course (ravioli of aubergine and smoked provola in a tomato sauce with basil pesto and buffalo mozzarella cream).
